Turmeric Coconut Flour Muffins
Everything turmeric brightens my day. Who can resist that vibrant glowing orange of
freshly cut turmeric. My morning starts out with a cup of tea with warm turmeric paste.
Lately I’ve been making turmeric coconut flour muffins for breakfast to go with our coffee
or tea. I’m even learning to bake them in the cast iron stove.
The original recipe came from Paleohacks
Like everything on the farm we adjust to what we have available. Although I did
use regular cow’s milk one of these times I’ll have to ask my hubby to get
some coconuts from the tree to use coconut milk instead.
6 large eggs
1 cup milk(coconut or regular milk)
1/3 cup of honey
1 tsp vanilla extract
½ cup of coconut flour
½ cup of whole wheat flour
½ baking soda
2 tsp turmeric powder
½ tsp fresh ginger
pinch of salt and pepper
Note: I used turmeric powder and fresh ginger since I did not have any ginger powder made.
1. Preheat oven to 350°F.
2. Either prepare a muffin tray with liners or a little oil.
3. Mix all wet ingredients in one bowl and all dry ingredients in another.
4. Combine wet ingredients into dry and mix.
5. Pour mix evenly into muffin tray.
6. Bake for about 25 minutes.
