Going Bananas! (A Banana Bread Recipe)

We love bananas… and so do our animals! The sheep love them, the chickens love them,
the cows and horses love them, even our dogs love to eat the sweet yellow fruit that
grows bountifully in this part of Central America. There are dozens of different varieties
of bananas grown throughout the world, and Costa Rica is the 3rd largest exporter of bananas in the world, so they are also a crucial part of Costa Rica’s economics.

Not only that, but bananas also have a ton of health benefits,
including lowering blood pressure and aiding digestion.

Many times when we grow bananas there will be seasons where there are only a
few clusters of bananas, and then all off a sudden… BOOM! Bananas for days,
everywhere you look in the front of the bodega there are bananas of all sorts to eat,
freeze, and give away to people, as well as to feed the animals with.

But one of our favorite things to do with bananas is to make Banana Bread!
It’s really rather easy to make, and it tastes awesome!

Banana Bread (Makes 2 Loaves)
(Adapted from the “Better Homes and Garden NEW Cookbook”)
Baking Temperature: 350 F

Ingredients:
3 Cups Flour
1 Tablespoon Baking Powder
1-2 Teaspoons Cinnamon
1/2 Teaspoon Baking Soda
1/4 Teaspoon Salt
2 Eggs
4-6 Large Bananas
3/4-1 Cup Granulated Sugar
1/2-3/4 Cup Brown Sugar
1/2 Cup Liquid (Oil/Milk/Buttermilk/Yogurt)
1 Teaspoon Lemon Zest (Optional)
1/2-1 Teaspoon Vanilla (Optional)
Raisins (Optional)
Chocolate Chips (Optional)

1. Stir the Flour, Baking Powder, Cinnamon, Baking Soda, and Salt.
2. Add the Eggs and Bananas.
3. Add the Granulated Sugar, Brown Sugar, Liquid,
and if you want, any of the optional ingredients.
4. Bake for 55-75 minutes.
5. Take out of the oven and let cool.
6. EAT!! 🙂
